Fijian vanilla honey does something specific here: it lifts rather than sweetens. This is the brightest expression on the route: clean vanilla, a little coconut off the rum casks, and a finish that clears instead of lingering. The one that holds up in the heat, and the one that makes the best highball in the series.

Finished in Amburana rum barrels and Fijian vanilla honey.

Tasting notes

• Nose

  Fresh vanilla, light honey, coconut water and green sugarcane.

• Palate

  Bright and clean. Vanilla and honey without weight, with a crisp grain note behind them.

• Finish

  Short to medium and refreshing. Clears the palate rather than coating it.

• How to serve

  Over ice, or long with soda and a lime wedge. Neat if you want the vanilla undiluted.
