Bora Bora

Water so clear it stops reading as water. Bora Bora is the softest arrival on the route. Organic Polynesian honey rounds the whole thing out, and the rum casks pull the bourbon toward stone fruit and warm sugar rather than oak and char. If someone at the table swears they don't like whiskey, this is the pour that tends to change their mind, though at 110.2 proof it still knows exactly what it is.

Finished in Amburana rum barrels and organic Polynesian honey.

Tasting notes

• Nose

  Wildflower honey, ripe apricot, coconut husk and a little toasted sugar.

• Palate

  Round and gentle for the proof. Stone fruit and honey lead, with the oak sitting well back.

• Finish

  Medium and sweet, closing on vanilla and a faint tropical note.

• How to serve

  Neat to taste it properly, on the rocks to serve it. Works well in a whiskey sour.
